How far does it open up? I like the factory option of opening straight up so I don't have to worry about hitting my head on the hood working in the engine bay. Is it just past the first hood prop or could it open higher

It's between the two prop points. If you wanted to lift the hood all the way to get it to "maintenance mode" then you'd just pop the shocks loose and use the prop rod.
