or could we theoretically just remove it completely dirong the install to avoid having to cut any thing?

Yeah, I hear ya. It really makes the rear seats unusable... you can take it in and out for track days, but otherwise I wouldn't recommend any (I don't know of other brands) to be used with passengers in the back seat

How easy is it to remove and reinstall? Would love to run this for HPDEs and AutoX, but I want usable rear seats for daily use.

Pretty easy - you just disconnect the 4 points which are held in with bolts.
